Christmas Countdown: Happy Christmas Eve and Baking Stress

Happy Christmas Eve my little virtual elves! Are you feeling Christmassy? I have been moaning for weeks about not feeling festive but as I was driving to WORK on Monday morning something just clicked! I am finally starting to enjoy the most wonderful time of the year and I have Christmas songs on every chance I can get.

I have a confession… I was one of those mad people who ventured into a shopping centre yesterday… THE HORROR! I do have a couple of excuses though – the first being that I was meeting my lovely friend Sam for dinner and to exchange gifts! The other was that my mother decided that I should make the dessert for Christmas day, and she told me this 3 days before Christmas…  Obviously an emergency dive to Tesco was needed.

So what masterpiece am I creating for Christmas desert? Well it’s a bit of a mystery really, even to me! I did a trial run on Sunday and came up with a gin and tonic cake which was pretty good, but not good enough for consumption on Christmas day. I sort of made it up from a mish-mash of a few recipes – mainly based on a gin and tonic cupcake recipe that I found on Pinterest. While it was pretty funky, I just don’t think the flavours were right for Christmas. Here it is in all its glory for you nonetheless.


No doubt that I’ll post the recipe at some point in the new year so if you’re interested, watch this space.

Moving on from that, I’ve decided to keep the same design and concept but just change up the flavours! Therefore I will be creating a lemon and passion-fruit cake… Hopefully. I haven’t made this before so if the flavours are crap I have a back-up – classic strawberry. Really it’s in the hands of the baking Gods now. I’ll let you know how it goes!
