IT’S BAAACK! The Great British Bake Off returns to our TV screens tonight and this year it’s on BBC1. I’ll be at the ready at 8pm to Oooh and Aaah over this years contestants and their fabulous bakes. In honour of the return I spent a bit of time baking on Sunday morning and came up with my very own recipe for Hot Smores Cupcakes. I’m aware that the concept of smores is a bit of an American thing, so for my less informed friends a smore is basically a melted marshmallow & chocolate biscuit sandwich – YUM! Read on for how I took this delicious concept and turned it into a melt-in-your mouth cupcake 🙂
SPOILER ALERT: I bought a box of chocolate cake-mix from Morrisons :O I know I should really have made my own mix but it was just so much easier! So you have my full blessing to use this awesome short cut if you’re low on time 🙂
I made up the cake mix using the instructions on the back of the box and then baked them in the oven for 15 minutes. I then left them to cool for 10 minutes whilst I prepared the chocolate buttercream (again from the box). Once the cakes were cool but not cold I got to work on the fun part! First of all I scooped out some of the cake using a teaspoon measure. This would provide a hole for the buttercream.
I then placed a marshmallow on top of the buttercream and put the cakes under the grill for about 1 minute.
Have your grill pan quite low down and keep checking the marshmallows to make sure they don’t burn. They will be ready when the top of is golden brown. Give the marshmallow a push (CAUTION: It will be hot) to spread that mallowy goodness over the top of the cupcake
Finally sprinkle some chocolate flakes on top and eat IMMEDIATELY! I know you’re not supposed to each cupcakes when they’re still hot but this is the exception. You will have a delicious, warm treat which literally melts in your mouth! The chocolate buttercream mixes with the ooey-gooeyness of the marshmallow and it. Is. Heaven.
